Quick and Easy Tomato Soup

Blake and I both talked over dinner about how Tomato Soup was not something we enjoyed as children.  I read somewhere that every 7-years our tastes change, which I think it a great thing! It makes sense too, as we live our lives, we are exposed to more flavors and flavor combinations.  I would never in a million years believed I would like brussel sprouts, but low and behold the last time I made them I loved them! I also used to hate sweet potatoes, and Blake and I currently eat them about once or twice a week.  This soup is quick, cheap, and easy, which are three of my favorite things. 


INGREDIENETS: 
1 small can tomato paste 
16 ounce can crushed tomatoes 
2 14ounce cans chicken stock (low sodium) 
1 small onion diced 
3 cloves garlic minced
1/2 tbs. dried basil 
1/2 tbs. dried parsley
1/2 tbs. dried rosemary
1 small plain greek yogurt 
1 tbs. olive oil
1 tbs. butter 
salt and pepper 

1.  Begin by sauteing the onions in the oil and butter over medium heat.  Once the onions have softened, add in the garlic so that you don't end up burning it.  Also add in the spices and cook them  over the medium high heat for a few minutes to help release the flavor.  

2.  Add in the tomato paste and crushed tomatoes.  Allow this mixture to cook over the medium high heat for 3-4 minutes.  Add in the two cans of chicken stock and bring to a boil.  

3.  Allow the soup to boil for 10-15 minutes, stirring occasionally.  Bring the heat down to low and allow the soup to simmer.  At this point, add in the yogurt and stir.  Keep the soup on low heat for up to 2 hours or until you are ready to serve.  The longer you leave it on, the better the soup will taste.  Be sure the soup isn't simmering or boiling once on low heat for the last two hours.  

4.  Top with Parmesan, basil, or any other toppings you love! Serve with a grilled cheese stuffed with bacon and enjoy!

** TASTY TIP: Don't forget to season each layer. Sprinkle the onions, tomatoes, and then again before serving to make sure the entire dish is properly seasoned.  Doing this will prevent you from over seasoning at the end and it will bring out the natural flavors of each ingredient!
