Banana Muffins - Pinterest Review
After getting back from a week long vacation, the bananas I bought before leaving were looking less than appetizing sitting in our fruit bowl. The best part of buying bananas is that even if they go bad, they still can be useful. I found this recipe on Pinterest, and decided to try it out with my browning and bruised nanners. They ended up turning out delicious and super moist. If I had been stocked in powder sugar, I would have added the cream cheese frosting to make these even more decadent. This recipe is perfectly easy, and I love how chunks of banana can be found inside. Check out the original recipe here at Clockwork Lemon's Blog !
INGREDIENTS:
3 over-ripe bananas
3/4 cup sugar
1 egg
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cup flour
1/3 cup melted butter
DIRECTIONS:
1. Begin by pre-heating your oven to 375 degrees.
2. Mash together the bananas, sugar and egg. Stir in the melted butter slowly.
3. In a separate bowl, whisk together dry ingredients, and then stir in to the banana mixture. The mixture should be lumpy. Do not over mix or your muffins will become tough.
4. Spoon into cupcake liners and bake for 15-20 minutes or until golden brown on top. Use a toothpick to check that the center of the muffins are cooked through.
5. If you want to add frosting, allow the muffins to cool completely before piping frosting on top.
